Curries: Sardine curry

Serves: 2 Preparation time: 10 minutes Ingredients: 2 cans sardines 3-4 cloves of chopped garlic ½ onion chopped Salt to taste One pinch turmeric ½ teaspoon chilli powder 2 potatoes sliced 2 carrots sliced Steamed rice Method: Take sardines out of cans. Pour the oil from it in a frying pan, save the fish fillets. When it is warm, add chopped garlic and onion. Add potatoes and carrots to the pan. Stir-fry till they begin to turn brown. Add salt, a  pinch of turmeric and chilli powder. Then add the sardine fillets. Cover and cook. Serve hot with steamed rice.

Curries: Daal

Serves: 3-4 Preparation time: 15 minutes Ingredients: One cup masoor daal/ red lentil ¼ onion chopped Salt to taste One pinch turmeric 2 green chillies sliced along the length 1 teaspoon ghee Method: In a deep pan, wash the daal. Put the pan on the stove. Pour 500ml boiled water. Add onion, salt, turmeric and chillies. Stir and let it boil. Once the daal is cooked, the water will reduce to a thick soup. Add ghee and serve hot.

Curries: Paneer in Mustard and Coconut Sauce

Serves: 2-3 Preparation time: 10 minutes Ingredients: 250 gm paneer diced 100 ml mustard sauce Grated coconut 2 tablespoon mustard oil 3-4 green chillies sliced along the length ½ cup milk Steamed rice Method: In a shallow bowl, place the paneer In another bowl mix mustard sauce, grated coconut and milk. Pour the mix on the paneer Add mustard oil and chillies. Microwave for 5-7 minutes. Serve with steamed rice.

Curries: Traditional Chicken Curry

Serves: 4 Preparation time: 20 minutes Ingredients: 6 chicken pieces 4 medium potatoes, cut in half 1 medium onion chopped 6 cloves garlic freshly pounded 3-4 green chillies sliced along the length 100 gm plain yoghurt 2 heaped tablespoon curry masala 2 tablespoon white vinegar 1 teaspoon cooking oil 1 teaspoon ghee Steamed rice or roti Method: In a deep pot, pour cooking oil. Once it is warm, put onion and garlic. Stir till they look slightly brownish. Add the potatoes. Add chicken pieces and stir till they get a light brown coating. Add the masala, yoghurt, chillies. Stir and add a cup of water for gravy/ broth. Cover and cook till the potatoes and chicken are cooked. Add vinegar and ghee. Simmer on low heat till the oil rises above the gravy. Serve with steamed rice or roti.
