Curries: Daal

Serves: 3-4 Preparation time: 15 minutes Ingredients: One cup masoor daal/ red lentil ¼ onion chopped Salt to taste One pinch turmeric 2 green chillies sliced along the length 1 teaspoon ghee Method: In a deep pan, wash the daal. Put the pan on the stove. Pour 500ml boiled water. Add onion, salt, turmeric and chillies. Stir and let it boil. Once the daal is cooked, the water will reduce to a thick soup. Add ghee and serve hot.

Rice and Breads: Khichdi

Serves: 2 Preparation time: 15 minutes Ingredients: 1 cup rice 1 cup masoor or moong daal / lentil ½ onion chopped 2-3 cloves of garlic freshly pounded ½ teaspoon cumin seeds 2-3 green chillies sliced along the length 1 teaspoon ghee Frozen green peas (optional) Salt to taste One pinch turmeric Method: In a deep pan, wash rice and daal. Put the pan on the stove and add 500 gm boiled water. Add onion, garlic, chillies, cumin seeds, salt, turmeric and green peas. Stir and leave it to cook till both rice and daal are soft. Mix ghee in thoroughly. Serve hot.

Snack: Chickpea Salad

Serves: 2 Preparation time: 10 minutes Ingredients: 1 can of chickpeas in brine 1 carrot chopped 1 medium-sized boiled potato 1/4th of an onion chopped 1 cucumber diced 1 tomato diced 2 green chillies chopped 200 gm couscous soaked 4-5 ham slices or roast chicken shredded (optional) Cheddar cheese to taste Fresh parsley or coriander chopped Method: Drain and pour a can of boiled chickpeas into a bowl. Add chopped carrot, boiled potato, onion, cucumber, tomato, fresh green chilli. If it is vegetarian, add soaked couscous. If non-vegetarian, add strips of ham slices or shredded chicken and cheddar cheese. Garnish with chopped fresh parsley or coriander leaves.
