Dessert: Coconut Barfi/ Ladoos

Serves: 4-6 Preparation time: 15 minutes Ingredients: 2 tablespoon semolina (also called suji or rawa) 500 gm desiccated coconut 4-5 peeled cardamom seeds (only seeds, not skin) 250 gm sweetened condensed milk Method: In a frying pan, dry roast semolina. Add coconut. Add cardamom seeds. Then, pour sweetened condensed milk. Mix them all till it forms a thick consistency. Turn off heat and pour the mix onto a flat tray. Cool it in the refrigerator. Then, with a knife cut it in diamond shapes. Each diamond is a barfi. For Ladoo: Turn off heat and while the mix is still warm, scoop out portions and roll them in your palms to form balls. The balls become harder and look nicer when they cool down. You can store these in a box in fridge and have them over a few days.

Snack: Spicy Peanuts

Serves: 2 Preparation time: 5 minutes Ingredients: 1 cup peanuts 1/4th onion chopped ½ teaspoon chopped ginger 1 cucumber diced 1 tomato diced 2 green chillies chopped 1 teaspoon chaat masala 100 gm bhujia or chips Lemon juice Method:                                           Roast peanuts in a pan. Then put them in a deep bowl. Add chopped onion, tomato, ginger, green chillies. Top it up with chaat masala and bhujia or any kind of chips. Add a dash of lemon juice. Mix together and it’s ready to serve.

Dessert: Semolina Pudding

Serves: 2-3 Preparation time: 7 minutes Ingredients: 100 gm semolina (also called suji or rawa) 2 mugs milk Sugar to taste 4 cardamoms Seasonal fruits (optional) Method: Dry roast 4 tablespoons semolina in a frying pan. Before they turn a darker shade, add milk. If you want it to be a thinner and lighter pudding, add some water to the milk. Add sugar as required. Peel cardamoms and add the seed and the skin. All this while, keep stirring thoroughly so that the semolina does not form lumps. When the pudding starts boiling and rises up, turn off heat and let it cool. You can have it warm or cold, with or without fruits. This is also good as a substitute for breakfast cereals.

Dessert: Sundae

Serves: 2 Preparation time: 5 minutes Ingredients: Ice cream (any flavour) Sliced seasonal fruits (bananas, oranges, berries, apples) Sunflower and flax seeds (optional) Method: Place two scoops of ice cream on a shallow dish. Arrange sliced fruits around it. Optional: sprinkle sunflower and flax seeds on top. Serve immediately.

Dessert: Oat pudding

Serves: 2-3 Preparation time: 10 minutes Ingredients: 100 gm rolled oats 2 cups milk Sugar to taste Assorted nuts, dry fruits and seeds Method: In a pan, add oats and enough milk for it to boil. You can add water to dilute the milk, if it gets too thick. Add nuts, dry fruits and seeds. Add sugar. Let it boil. Then turn off heat and let it cool. Serve chilled.
