Snack: Spicy Peanuts

Serves: 2 Preparation time: 5 minutes Ingredients: 1 cup peanuts 1/4th onion chopped ½ teaspoon chopped ginger 1 cucumber diced 1 tomato diced 2 green chillies chopped 1 teaspoon chaat masala 100 gm bhujia or chips Lemon juice Method:                                           Roast peanuts in a pan. Then put them in a deep bowl. Add chopped onion, tomato, ginger, green chillies. Top it up with chaat masala and bhujia or any kind of chips. Add a dash of lemon juice. Mix together and it’s ready to serve.

Dessert: Sundae

Serves: 2 Preparation time: 5 minutes Ingredients: Ice cream (any flavour) Sliced seasonal fruits (bananas, oranges, berries, apples) Sunflower and flax seeds (optional) Method: Place two scoops of ice cream on a shallow dish. Arrange sliced fruits around it. Optional: sprinkle sunflower and flax seeds on top. Serve immediately.

Snack: Chickpea Salad

Serves: 2 Preparation time: 10 minutes Ingredients: 1 can of chickpeas in brine 1 carrot chopped 1 medium-sized boiled potato 1/4th of an onion chopped 1 cucumber diced 1 tomato diced 2 green chillies chopped 200 gm couscous soaked 4-5 ham slices or roast chicken shredded (optional) Cheddar cheese to taste Fresh parsley or coriander chopped Method: Drain and pour a can of boiled chickpeas into a bowl. Add chopped carrot, boiled potato, onion, cucumber, tomato, fresh green chilli. If it is vegetarian, add soaked couscous. If non-vegetarian, add strips of ham slices or shredded chicken and cheddar cheese. Garnish with chopped fresh parsley or coriander leaves.

Snack: Corn Masala

Serves: 2 Preparation time: 5 minutes Ingredients: 1 cup frozen corn kernels Chaat masala Lemon juice Method: Take frozen corn kernels in a porcelain mug. Add half a teaspoon chaat masala. Add a few drops of lemon juice. Mix them. Put in the microwave for 2 minutes. Ready to eat.
