Appetiser: Bread dahi vada

Serves: 4 Preparation time: 10 minutes Ingredients: 6-8 slices white or brown bread Plain yoghurt Tamarind sauce Bhujia Chaat / panipuri masala 2 chopped green chillies Method: Cut the slices of bread along the middle. Put them in the grill for 2 minutes to make them very lightly crispy (optional). Layer up the rectangular pieces on a tray. Generously lather them with plain yoghurt. Spread tangy tamarind sauce on it. Put the tray in the fridge for a few hours, till all the layers soak up. Before serving, sprinkle bhujia. Top up with chat or panipuri masala and some fresh green chilli slices. This one promises to tickle the tangy and hot tastebuds.

Appetiser: Bruschetta (hot)

Serves: 4 Preparation time: 10 minutes Ingredients: White or brown bread Cheddar cheese 1/4 onion diced ½ tomato diced ½ capsicum diced Salt and pepper/ chilli flakes to taste Method: Cut the slices of bread along the middle. On each rectangular piece, place a slice of cheddar cheese slice and top it up with diced onion, tomato and capsicum. Arrange the slices on a dinner plate and put it in the microwave for 2 minutes. Take it out, sprinkle salt and pepper/ chilli flakes. Perfect for party food.

Snack: Bruschetta (cold)

Serves: 4 Preparation time: 10 minutes Ingredients: White or brown bread Cheddar cheese Sundried tomato Olives A few slices salami or pepperoni (optional) Tooth-picks Method: Cut the slices bread along the middle. On each rectangular piece, place a slice of cheddar cheese slice, a slice of salami or pepperoni (optional for non-vegetarians), sundried tomato, olive. Then pierce a tooth-pick to hold all the layers together. Serve on a tray. Perfect for party food.

Snack: Spicy Peanuts

Serves: 2 Preparation time: 5 minutes Ingredients: 1 cup peanuts 1/4th onion chopped ½ teaspoon chopped ginger 1 cucumber diced 1 tomato diced 2 green chillies chopped 1 teaspoon chaat masala 100 gm bhujia or chips Lemon juice Method:                                           Roast peanuts in a pan. Then put them in a deep bowl. Add chopped onion, tomato, ginger, green chillies. Top it up with chaat masala and bhujia or any kind of chips. Add a dash of lemon juice. Mix together and it’s ready to serve.

Dessert: Semolina Pudding

Serves: 2-3 Preparation time: 7 minutes Ingredients: 100 gm semolina (also called suji or rawa) 2 mugs milk Sugar to taste 4 cardamoms Seasonal fruits (optional) Method: Dry roast 4 tablespoons semolina in a frying pan. Before they turn a darker shade, add milk. If you want it to be a thinner and lighter pudding, add some water to the milk. Add sugar as required. Peel cardamoms and add the seed and the skin. All this while, keep stirring thoroughly so that the semolina does not form lumps. When the pudding starts boiling and rises up, turn off heat and let it cool. You can have it warm or cold, with or without fruits. This is also good as a substitute for breakfast cereals.
