Snack: Chickpea Salad

Preparation

Ingredients:
- 1
can of chickpeas in brine
- 1
carrot chopped
- 1
medium-sized boiled potato
- 1/4th
of an onion chopped
- 1
cucumber diced
- 1
tomato diced
- 2
green chillies chopped
- 200
gm couscous soaked
- 4-5
ham slices or roast chicken shredded (optional)
- Cheddar
cheese to taste
- Fresh
parsley or coriander chopped
Method:
- Drain
and pour a can of boiled chickpeas into a bowl.
- Add
chopped carrot, boiled potato, onion, cucumber, tomato, fresh green
chilli.
- If
it is vegetarian, add soaked couscous.
- If
non-vegetarian, add strips of ham slices or shredded chicken and cheddar
cheese.
- Garnish
with chopped fresh parsley or coriander leaves.
